Slow Cooker Mango Peach Chicken Leg Quarters

Ready for another easy, delicious and CHEAP recipe? Leg Quarters are super cheap, always on sale somewhere and have lots of meat on them.  Even better, they cook really well in the slow cooker!

These were tender, juicy and incredibly flavorful.  There are only four healthy ingredients involved in this recipe, which makes it incredibly easy if you're busy like me. 

If you're thinking, "I can't find Mango Peach Salsa," they have it at Costco, but you could use any kind of salsa you like with this recipe as well.  It will still come out delicious.  If you really want mango peach salsa and can't find any, make your own.  Mine had pieces of mangos, peaches, red pepper, green peppers and onions in it. If you were to throw all that in your crock, I'm sure it would be equally as delicious.

We served ours over Angel Hair Pasta (which cooks in 3 minutes btw,)  but you could serve yours over rice, or without any starch.  

Mango Peach Leg Quarters

Ingredients:
4.5 lbs. (or there about) Chicken Leg Quarters
1 1/2 cups red onion, roughly chopped
1/2 -3/4 cup cilantro, chopped
2 cups Mango Peach Salsa
Salt and pepper

Directions:
Place your leg quarters in your crock and sprinkle with salt and pepper.  Sprinkle with your red onions and cilantro.  Pour your salsa over the top.  

Cook on LOW for 8-10 hours or on HIGH for 4-5 hours.
