Video Recipe: Simple Seafood Spaghetti

This family-friendly pasta dish is easy to make and can be ready in half an hour.

When we were kids, my two little brothers and I would frequently beg our mom to fix this dish for us when she came home from work. We would all eat together, slurping up our pasta while my mom watched her beloved Wheel of Fortune on the tiny black-and-white TV next to the kitchen table.

Now, I make this for my son, Ethan, when we just want something quick and delicious for dinner. 

There’s virtually no prep work involved, it's quick, it's easy and kids seem to love it. It’s perfect for those hectic evenings when you have to feed your family but don’t have a lot of time, and you can pick up all the ingredients at pretty much any grocery store.

It takes about 20-25 minutes to prepare and serves four to six people.

Ingredients

  • 2 tablespoons olive oil
  • 4 or 5 cloves of garlic, minced
  • 1 pound frozen, cooked, tail-off shrimp
  • 3 cans chopped or minced clams
  • 1 cup fresh parsley
  • pasta, cooked and drained

Directions

In a large pan, brown the garlic in the olive oil. Add the three undrained cans of minced or chopped clams. Bring to a boil and add the frozen shrimp. Bring back to a boil and add the chopped parsley. Reduce heat, cover and simmer for 5 or 10 minutes, stirring occasionally.

Serve over the pasta of your choice (I prefer angel hair or thin spaghetti).
